What the suffix changes
ZZ means two metal shields; 2RS means two contact rubber seals. Neither changes the boundary dimensions of the bearing.

Can a ZZ bearing be used where a 2RS bearing was fitted?
Only if the environment is clean and dry. ZZ shields keep out coarse debris but do not seal against moisture or fine dust the way 2RS rubber seals do.
Do ZZ and 2RS versions of the same model share the same dimensions?
Yes. The suffix only changes the closure; bore, outside diameter and width follow the base ISO designation.
